Surrounded by magnificent mountains and blessed with clear air and pure water, Shinshu is a region rich in natural beauty. Within this abundant natural environment, Shinshu Premium Wagyu is carefully raised with great dedication. Shinshu Premium Wagyu is recognized not only for its beautiful marbling, but only cattle that meet strict standards — including the oleic acid content, which greatly influences the flavor of the fat and the smoothness of its melt-in-the-mouth texture — are certified as Shinshu Premium Wagyu. At our restaurant, in addition to Shinshu Premium Wagyu and other branded beef, we carefully select A5 and A4 grade Japanese Black Wagyu in the best condition from all over Japan. We use female cattle, which possess the true deliciousness characteristic of Japanese Black Wagyu. Furthermore, to enhance its appeal even more, we use salt koji produced by Kojiya Honten, a long-established koji brewery in Saiki, Oita Prefecture, for our sauce. The gentle sweetness of rice koji harmonizes with Wagyu fat, enhancing its umami while creating a light and elegant aftertaste. With a trained eye for selecting ingredients and the craftsmanship that brings out the individuality of each cut of meat, every slice draws out rich flavor and leads to a tender texture that gently melts on the palate. In a tranquil space overlooking the Kamogawa River in Kyoto, please take your time to enjoy the refined flavors created by Wagyu and koji.
